Hush Puppies

  • 1 ½ cups self-rising cornmeal
  • ½ cup sifted self-rising flour
  • 1 egg, beaten
  • ¾ cup sweet milk
  • 6 t. minced onions

Sift together dry ingredients. Add onion, beaten egg, and milk. Stir lightly to moisten well. Drop a scant teaspoon of batter for each hush puppy into hot deep fish grease. Cook until brown. When done they will float. Drain on absorbent paper.

Blue Cheese Deviled Eggs

  • 1 dozen eggs
  • 1/8 t. salt
  • 1/8 t. pepper
  • ½ t. celery salt
  • ½ cup mayonnaise
  • ¼ cup crumbled blue cheese

Boil eggs. Carefully peel and then cut in half. Remove yolks and transfer to separate bowl. Mash yellows with salt, pepper, celery salt and mayonnaise. Crumble bleu cheese in – about one tablespoon for a half dozen eggs. Refill hollowed-out white with mixture, garnish with celery leaves and enjoy!

Chicken Casserole

  • 3 cups chopped cooked chicken
  • 2 cans condensed cream of chicken soup
  • 1 carton sour cream
  • 2 t. poppy seed
  • 1 pkg. snack crackers
  • 1 stick margarine

A family favorite! Boil chicken. Take chicken off the bone and put it in the dish. Mix cans cream of chicken soup and carton of sour cream. Pour over chicken. Add poppy seed to mixture. Then, add snack cracker crumbs over this mixture. Melt margarine and pour over mixture. Bake at 350 until bubble.

Cherry Delight

  • 6 eggs
  • ¾ t. cream of tartar
  • 2 cups sugar
  • 2 cups saltine cracker crumbs
  • ¾ cups chopped nuts
  • 2 t. vanilla
  • ½ pint whipped cream
  • 1 can cherry pie filling

In a bowl, beat 6 egg whites until frothy. Add cream of tartar. Gradually, add sugar beating until stiff. Fold in saltine cracker crumbs, chopped nuts, and vanilla. Pour into long greased pan and bake for 25 min in 350-degree oven. Cool. Cover with whipped cream. Spread cherry pie filling over cream. Chill for 2 hours before serving.
